1 cup gluten free rolled oats (One Degree GF Rolled Oats)
1 cup cassava flour (we use Otto's Naturals Cassava Flour)
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon or pumpkin spice mix
1/4 tsp sea salt
1/2 to 1 cup chocolate chips (Enjoy Life Chocolate Chips)
1/4 cup + 2 tablespoons melted coconut oil
1/4 cup coconut sugar or cane sugar
1/4 cup maple syrup (Parker's Maple Syrup)
2 eggs
1 tsp vanilla extract
Pre heat oven to 350 Fahrenheit.
Mix wet ingredients and dry ingredients separately.
Slowly incorporate the dry ingredients into the wet.
Use a small scoop to measure out cookies onto baking sheet lined with parchment paper.
Bake for 15 minutes. Yields about 15 cookies.
